    Ni Hao! I’m an American that lived in China for 18 years, but the first 9 of those years were in Inner Mongolia province. As a result, the northern style and flavors of cooking greatly influenced my Chinese taste buds. I was delighted to come across your website last year, and have not been disappointed with a single recipe I cooked. One of my favorite posts is the one you did about ingredients. I meticulously followed your recommendations and filled my pantry with quality Chinese ingredients and discarded the ones that were Asian but not necessarily best for Chinese cuisine. Knowing the right kinds of vinegar or soy sauce has made a great difference in the results. I’m no longer disappointed or discouraged in the results I get, because I know if I follow your recipes I will indeed get authentic Chinese dishes! Thank you for pushing me from being a discouraged Chinese cook who gave up trying to a learner! My family is delighted! It always seemed easier to buy good Chinese food in China than learn to cook it myself, but now I have a way to recreate those dishes and experiences here in the US. Thanks again!
