Xinjiang tiger salad (老虎菜)

Pungent flavour stimulates your palate at first taste, just like the shock you would get when encounter a tiger. This is how Xinjiang tiger salad gets its name.

  • 1 red onion
  • 2 tomatoes
  • 3 green chilli or to taste
  • 1 small bunch coriander
  • 2 teaspoon black rice vinegar
  • 1 pinch sugar or 1 drop honey
  • Salt to taste


  • Slice up red onion, tomato and chilli. Chop coriander. Put them into a salad bowl.
  • Mix vinegar, sugar (or honey) and salt. Pour over the vegetables. Gently toss around then serve.
